Spring Break by the Food

I can't say all the meals this spring break have been healthy, but I've been having fun in the morning making a new breakfast foods for the kids and myself. Breakfast is the easiest for me because that is when I have the energy to make it. Dinner may be chicken nuggets if the kids are lucky ;) Anyhow, I thought I'd write down what I made so that we have ideas in the future. The ingredients I usually always have in my house.

Anyhow our meal plan for this weeks breakfast included:
Monday - Omelets - make it your way
Tuesday - Oatmeal with cereal, milk and some flax-seed
Wednesday - Cereal smoothies - strawberry, Greek yogurt, flax-seed and ground fiber cereal
Thursday - crepes with strawberries and raspberry/rhubarb syrup
Friday - egg salad open face with avocado and tomato

Children Update

Leah is 3 1/2 years old, talking constantly, and dancing everywhere. As I type this she is chasing our cat Casper around the house, one of her favorite pass times these days. She is a true gem to have around the house all day long, so I'll miss her when she starts school in the fall.

Zachary is 6 years old. He is brilliant as ever. He just received his 3 quarter report card and as always shines in class. His teacher said that he is a "role model" for the other students. Wow, I can't believe my Zachary who torments his sister and eggs on his brother is a role model. He is also taking Tae Kwon Do with his brother Avery. They are both going to be testing for the blue belt tomorrow and going to an all day tournament on Saturday.

Avery is doing great in 1st grade. It took him a while to warm up to this year and all the work they have to do in school, but by 2nd quarter he learned. He resists homework at night, but he does it and that is all we can expect from a 7 year old. He is reading fluently now and really enjoys the Diary of a Wimpy Kid books. He is on number 5 now!
